Cookie Dough Chaga Protein Balls

While these protein balls may taste like cookie dough, but they are packed with healthy fats, protein and antioxidants.  I like to make a big batch and store them in the fridge or freezer to snack on throughout the week.

You can use any good quality protein powder for this recipe, but my personal favourite is Purica Power Protein. It is a fermented pea protein with brown rice, and 800 g of chaga mushroom per serving.

This protein powder also contains a special probiotic enzyme blend to enhance digestion.

I will also add that it tastes amazing, and my favourite flavor is vanilla, but it also comes in chocolate or unflavored! Aside from these protein balls, I love adding this protein powder to my morning smoothies. It has a smooth texture, and the chaga adds a slightly nutty flavor! Cookie Dough Chaga Protein Balls

  • Servings: approx. 12 balls

A great snack to fuel your work day! Packed with protein, healthy fat, and antioxidants.

Ingredients

  • 1 + 1/2 cups almond meal
  • 2 scoops Purica Chaga Protein Powder
  • 2 tbsp chia seeds
  • 1/4 cup cashew milk (or other nut milk)
  • 1 /2 cup cashew butter or almond butter
  • 1/2 cup coconut butter
  • 1/4 cup coconut oil (melted)

Directions

  • Mix together the dry almond meal and protein powder.
  • In a separate bowl mix together the chia seeds and cashew milk (or other nut milk). Let the chia seeds expand.
  • Add the chia seed mixture, coconut butter, cashew butter, and melted coconut oil to the dry ingredients. If needed, add more almond meal until the mixture is thick and can be rolled into a ball.
  • Roll into balls and let harden in the fridge or freezer.
